Tonight's repast (if I can get to the store for more Heavy Cream) will be the venison backstrap (tenderloin) grilled to a nice rare/mid-rare with a Demi-glace/Cream/Mushroom/Cognac Sauce, with patates gratinée and some asparagus with either Bearnaise or Hollandaise sauce.

I think I will go with the Bearnaise because I want the tarragon.

It is what you have to work with.  Raccoon is delicious when cooked properly, (closely related to the bear, btw), pig 'que-d in-ground is famously delicious from the Deep South to the Pacific Islands (and elsewhere)...
