How do you make good acorn squash? I got a bunch of them on sale and they are just sitting on the counter. I was going to cut them into little pieces and boil them, but I know that will be gross and I will just throw them out. If you have the chance, PM me a good recipe or 2. I don't want to derail the thread.

Love acorn squash. A good pairing with Cornish game hens and Beaujolais.
Cut in half. Remove seeds. Bake cut side down at 350 for 40 minutes.
Turn cut side up. Pepper. Dollop of butter. Generously sprinkle with brown sugar and a little cinnamon
Bake another 20 minutes.  Enjoy

Basically my recipe...skip the light fandango on the savory side and mash them up with more butter, parmesan cheese and a little heavy cream! OMG!
